Japanese Chicken Katsu Curry & Cauliflower Fried Rice

and above is my attempt at recreation. Down below is summarized version of the recipe. For the my summarized recreation video, please check my recreation video.


Skill Level:

Intermediate

Ingredients:

Curry

1 Large onion

1 tbsp butter

1 Chicken Stock

1 Japanese curry mix

Tonkatsu sauce to taste (but average around 1 tbsp)


1. Put butter in the pan and saute onions until caramelized brown

2. Once caramelized, add 1 box of chicken stock and heat to boil

3. Add 1 pack (4 little cubes) into the curry

4. Add the Tonkatsu sauce

5. simmer

Tonkatsu

Several chicken breast or pork loin or tenderloin

4-5 eggs

Handful Flour (I used chickpea flour leftover that I bought for making falafel)

Handful Panko/breadcrumbs

Grapeseed/Extravirgin oil/avocado oil


1. Whisk eggs in a separate bowl

2. Grab the chicken/pork loin or tenderloin and use tenderizer to beat it until chicken is thin.

3. Coat the meat in this order: flour, eggs, breadcrumbs, egg, breadcrumbs

4. Put the coated meat in the frying pan with enough oil covering the meat source @ 300-350F, and flip it as the side becomes golden brown


Cauliflower Rice

1 small head of cauliflower, cut into florets (or buy already frozen cauliflower rice)

Optional Meat source (I used left over Tofu and cooked pork belly)

2 large eggs

2 medium scallions sliced thin

2 tablespoons sesame oil

1 tablespoon fish sauce

1 tablespoon soy sauce

1 teaspoon freshly ground black pepper

1 teaspoon garlic, minced

1 teaspoon ginger, minced


1. Get cauliflower cut into florets into food processor and process them into rice chunks

2. Saute the meat source (I used tofu in this case, but you can use any other that may go well with fried rice)

3. Saute the cauliflower + fish sauce + soy sauce + sesame oil + black pepper + garlic + ginger

4. Either on the same pan or different pan, cook the eggs and mix it together
