This is dish is originally done by Seonkyoung Longest (Reference: https://youtu.be/aafmrrx7Bh4), and above is just an attempt at recreation . Down below is summarized version of the recipe which could be also found on her YT video. For the detailed version, please check the video.
Servings: 4 (but to be honest, it can be 8-10 depending on how much meat you use because there are enough broths for 8-10 servings)
Time: Cooking takes ~1hr but broth prep boiling takes 3-4hr (but note that you can save the broth for the future)
Skill Level: Intermediate
Ingredients & Direction:
• Broth:
6 lb pork neck bones
2 oz ginger (sliced)
sliced 2 bulbs garlic (cut into halves)
1 large leek, cut into hal
1.5 oz kombu (dried kelp)
1.5 Tbsp chicken stock powder
24 cups cold water
Add all of the above ingredients into the pot and heat to boil without cover (do not stir) --> first 15 min, remove all the gunk and fat that floats to the top --> cover, reduce heat to medium and simmer for 3 hours --> drain the broth into another bowl --> take 2-3 cups of broth into a separate bowl (for the rest of the broth, you can freeze this broth to save for 1month, or refrigerate for 7 days) and you can boil this again before serving
• Pork belly (ie Chashu):
2 lb Pork belly
After simmering the broth for 3 hours, add the pork belly and simmer for additional 1 hr --> remove the belly after and add tare sauce on the belly
• Tare Sauce:
1.5 cup soy sauce
3/4 cup sake
3/4 cup mirin
1 ginger (sliced)
1 clove garlic (crushed)
Add all the above ingredients together --> heat to boil for 5-7 min
• Ramen:
3 oz bean sprouts (boiled)
5 oz (ie 1 portion) of fresh (or frozen) ramen noodles
2 green onions (chopped)
1-2 soft boiled egg (I like my eggs boiled for about 8 minutes; do 6 minutes if you want super yolky)
1 garlic cloves
0.5 cup Corn
Boil the eggs, and boil the ramen separately on a water --> to bring everything together, put 1/3 or 1/4 cup of tare sauce (depending on how salty you want your ramen to be) + about 2 cups of broth + ramen + egg + beansprouts + chasu + green onions
